Hummingbird Cake
Ingredients
- 2 3/4 cups all-purpose flour, plus more for dusting pans
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/2 tsp salt
- 1 cup finely chopped fresh pineapple
- 1 cup granulated sugar
- 3/4 cup packed light-brown sugar
- 3 large eggs
- 1 cup canola oil
- 1 tsp vanilla extract
- 1 1/2 cups mashed very ripe bananas
- 1 cup pecans, toasted and finely chopped
Frosting and topping
- 2 (8 oz) pkg cream cheese, softened
- 3/4 cup unsalted butter, softened
- 2 cups powdered sugar
- 1/2 tsp vanilla extract
- 1 - 2 cups sweetened shredded coconut, toasted*
