Ingredients

• 2 3/4 cups all-purpose flour, plus more for dusting pans
• 1 tsp baking soda
• 1 tsp ground cinnamon
• 1/4 tsp ground nutmeg
• 1/2 tsp salt
• 1 cup finely chopped fresh pineapple
• 1 cup granulated sugar
• 3/4 cup packed light-brown sugar
• 3 large eggs
• 1 cup canola oil
• 1 tsp vanilla extract
• 1 1/2 cups mashed very ripe bananas
• 1 cup pecans, toasted and finely chopped

Frosting and topping

• 2 (8 oz) pkg cream cheese, softened
• 3/4 cup unsalted butter, softened
• 2 cups powdered sugar
• 1/2 tsp vanilla extract
• 1 - 2 cups sweetened shredded coconut, toasted*
